Oreo Peppermint Crunch Cookies

Easy to make little beauties sure please kids of all ages

Box cake mix (Betty Crocker Vanilla is best but use your favourite)
110 grams of butter melted
1 egg (I use size 7 free range)
1tsp Peppermint Extract
1 sleeve of Crushed Oreo cookies about 200 grams, but really it's Oreos do as many as you like
10 Large Candy Canes Crushed

In a bowl combine cake mix, butter, egg and extract. Stir in Oreos and Candy Canes. If you like a flat crunchy cookie over crisp on the outside but soft in the middle, just add more butter to make the batter wetter. Go easy though as you'll find it can spread out too much on the tray.

Drop rounded teaspoon batter balls onto lined cookie tray and bake at 180 for about 10 mins or until tops are golden brown. You may want to flatten your batter ball down before and after baking. An easy alternative is to pour whole batter into a greased 9 x 13 baking dish. Cook on 180 for about 20 mins or until top is golden brown and cut into slices.
